Gilbert was born on Dec. 19, 1954, in Slaton to Julio and Maria Escobar.

He married Connie Orona on Jan. 22, 1972 in Slaton and they celebrated 50 years of marriage together. Gilbert found a calling in insurance; He began working for Reliable Life in 1980 and upon retirement he continued working part time as an independent agent, faithfully serving the insurance needs of Slaton and the surrounding areas until his passing.

Gilbert was a lifelong member of Our Lady of Guadalupe Catholic Church, where he was a member of the Men’s Club. Church is where Gilbert learned the value of service and community, serving in his younger years on the Slaton Volunteer Fire Department and receiving the Fire Fighter of The Year award, in later years serving as a volunteer for the Slaton Meals on Wheels. Together Gilbert and Connie operated Connie’s Caribbean Shaved Ice in Slaton from 1990 to 2022 serving cool treats and warm smiles to their community for 32 years.

When the opportunity would arise, he enjoyed playing a round of golf or finding a nice fishing spot. Gilbert found enjoyment in gatherings, especially those that included barbecue with friends and family. While Gilbert found enjoyment in serving and being around others, he found both pride and joy attending sporting events watching his only grandson, Nate, mature into the young man and athlete he has become.

Gilbert is preceded in death by his wife Connie, daughter Leticia Escobar, his parents, and two brothers Alex and Chris Escobar.

He is survived by his two sons, Gilbert Escobar Jr. and wife Lucinda of Lubbock and Adrian Escobar of Lubbock, sister Ofelia Hinojosa of Lubbock, three brothers Rudy Escobar and wife Yvonne of Lubbock, Ruben Escobar and wife Antonia of Lubbock and Steve Escobar and wife Lupe of Slaton, and grandson Nathaniel Escobar of Lubbock.
